So it doesn't really matter "what the producers think" or what any of you think actually, because there's no way they're going to pass Emma off as Cho. I mean, honestly, I know a lot of Asian girls that are a lot prettier than Katie, but what's the huge fuss? She kisses Daniel, shows up in a couple of other scenes, and her career is over. While Hermione is a key character in the series, and thus your precious Emma will show up a lot more often. Besides, according to HBP, Hermione ends up with Ron anyways, so who really cares about how cute she and Daniel look together. Unless you're implying that they should have a relationship in real life.
